พาทูลิน (patulin) คือ สารพิษจากเชื้อรา (mycotoxin) ที่สร้างจากเชื้อรา Penicillium expansum,P enicillium patulum
ซึ่งเป็นเชื้อราสาเหตุโรคเน่า (blue mold rot) ของผลไม้ เช่น แอปเปิล สาลี่ องุ่น แตงเมล่อน สตรอเบอรี่ และผลไม้ในกลุ่ม
stone fruit เช่น พรุน และ ท้อ
Patulin เป็นสารพิษที่มีเป็นพิษต่อระบบประสาท (neurotoxin) เป็นสารที่ก่อให้เกิดมะเร็ง (carcinogen)

สหภาพยุโรปออกระเบียบระเบียบ (Commission Regulation) ที่ COMMISSION REGULATION (EC) No 1881/2006
of 19 December 2006 ควบคุมระดับสูงสุดของสาร patulin ในอาหารมนุษย์ ที่ผลิตมาจากหรือมีส่วนผสมของผลิตภัณฑ์
แอปเปิล เพื่อป้องกันและลดสาร patulin ในน้ำแอปเปิลและเครื่องดื่มประเภทอื่นๆ ที่มีน้ำแอปเปิลเป็นส่วนผสม ดังตารางต่อไปนี้

การป้องกัน
การป้องกันและลดสาร patulin ในน้ำแอปเปิลและเครื่องดื่มประเภทอื่นๆ ที่มีน้ำแอปเปิลเป็นส่วนผสมในทุกขั้นตอนการผลิต ทั้งในสินค้าเกษตรและสินค้าอุตสาหกรรม โดยใช้ Good Agricultural Practice (GAP) เช่น คำแนะนำก่อน ระหว่าง และหลังการเก็บเกี่ยว การขนส่งผลไม้
และการเก็บรักษา เป็นต้น และใช้ Good Manufacturing Practice (GMP) ระหว่างการแปรรูป
